The section on vinaigrettes explains several more aspects of how they work, why you make them as you do, and how they might be injured and repaired than J. Kenji López-Alt's equivalent section of The Food Lab does, in a tenth as many words.So it's not rambling, discursive, anecdotal, or overlong, and the prose soars only a little, here and there, mainly at the chapter starts. But read with attention, it casts a delicious spell of clarity, and regularly achieves the goal of all true explanations: to make the familiar, strange. McGee has packed this beautifully designed book with thousands of little insights and pieces of advice that will make you cook better. It's a delight.My only dissatisfaction with the hardcover is that I wish the dust jacket had been reproduced on the surface of the book itself, and that the surface was glossy, to make it feel more like the kitchen-based book it is than a standard nonfiction offering (and that it had a sewn, not a glued, binding, as so many cookbooks do, for durability). But none of Penguin Press's books have those features, and as regular hardcover books go, it is very pleasingly printed, with thick, luxurious paper.

The second of Harold McGee's excellent resources on food preparation. This book is not as technical as his first, but very practical. It answers many how, what and why questions that arise as you prepare foods. It too is a reference even though it is for me easier reading than his "On Food and Cooking" book. When you want to know why something works or why it did not this is a valuable resource.

Just opened my parcel. What is said on 550 pages could be said on 150 or less.I do not appreciate the self advertising on the cover and the first pages.The ratio of actual information, print and empty space on each page is appaling. The print and the binding are substandard.In between there are some useful ideas, but the editor has not done his or her job.

This book is very casual. I found it to be fairly random, and not as informative as I'm used to from Harold McGee.BUY "ON FOOD AND COOKING" INSTEAD. Its by the same author, and is a masterpiece. It covers every aspect of cooking to the very grittiest detail. The chapter on eggs begins with a detailed, scientific description of the chickens entire gestation period.Why is that important? Once you know what an egg is composed of you'll know why and how cooking it certain ways changes its characteristics. Once you know the chemistry and physics behind food and cooking you know EVERYTHING. No more rules of thumb or pointers, just genuine, fundamental knowledge.If you want simple rules of thumb, but no genuine knowledge, then buy this book. If you want the knowledge of an executive chef buy "On Food and Cooking" same author, different world.

If you've ever wondered why eggs are so special or why bread does or does not rise to your expectations...Harold McGee is the author for you. This book isn't about recipes as much as it's about good eating and learning how to cook. I think of it as raising the bar.

I enjoy using McGee's "Keys to Good Cooking. its information is useful, clear, and fairly copious, and as usual it debunks commonly held myths. the book takes the perspective of focusing on ingredients or types of ingedient and then the different means of preparing them and how any method affects the taste and texture. since I do more experimentation than recipe following, McGee's approach works well for me. it presents alternative ways to consider the taste or texture problem I am trying to solve, and so far has steered me in fruitful directions.if I could own just one book by McGee, it would still be the justly famous [[ASIN:0684843285 On Food and Cooking], which is a hard act to follow. nonetheless, I find the new volume a welcome addition and I refer to it frequently.one warning about the Kindle edition, however: the publisher made the index flat text without hyperlinks, so you can see what's in the book, but you can't get there from here. this is *REALLY* irritating; perhaps later editions will correct this lunacy.

I'm going to disagree with some other reviewers here. I have been been reading Mr McGee for many years, and regard myself as a huge fan.Few of his previous works would be suitable for the everyday cook. This one is. I think they are ideal: they send you to the essential points immediately.I have sent this book to some of my friends who would never read even think to peruse Mr McGee's previous opuses. But I am sure they will at least leaf through this one.

If you want a laugh, read the 1-star review and comments on it. The reviewer tried to trash Ms. Young's definitions of "wok hay" by (according to a commenter) quoting the Wikipedia article on the subject, which in turn (according to another commenter) was quoting . . . Grace Young!I measure the value of a cookbook by how much information (recipes, technique, and lore) I copy out of it into my personal cooking files. By that standard, this book is at the top of my list for all time. To top it off, the writing is often lyrical, always informative. My senses have had an awakening, and my kitchen life will never be the same.

My husband decided he wanted to try wok cooking so started with this book. Grace Young is AWESOME. If you're new to woks or just wanting to up your game, she's an essential read. Equally essential is the right wok. She recommends (and we bought) this one from Amazon: 14 Inch Carbon Steel Wok w/ Helper Handle (Flat Bottom), sold and shipped from The Wok Shop. BE SURE to buy directly from the Wok Shop, not just someone who resells from them, because they followed up with instructions on how to properly season it by email. WOW was that impressive--and essential given that this isn't non-stick otherwise. Gorgeous pictures and lots of info make this a must-read if you'd like to make wok cooking part of your life.

I have an entire bookcase full of cookbooks, and this is one of my very favorites. Most of my cookbooks just sit there, full of promise, but this book gets pulled out MUCH more often than most. It's beautifully done (the cover is stunning), the photography is first rate and tells a great story, but most importantly to me the writing is clear, descriptive and extremely practical. Although I've enjoyed Asian foods my whole life, I didn't grow up with it at home, and this book was a real eye-opener. I've learned more "new things" from this book than I have from ANY other cookbook (and I have 5 shelves full of cookbooks).The first 50 or so pages focus on the history of the wok, the different types of woks, etc. and it's all interesting reading; the book also provides very useful context for selecting/buying a wok. Grace Young offers many tips on how to cure/season a wok, how to maintain a wok, and how to bring a dead wok "back to life". The book then explains the principles of stir-frying, and there are a few really critical techniques that explained very clearly, e.g. hot wok/cold oil, "swirling-in" liquids, the importance of using ingredients that are dry, how much protein/veggies you can put into a wok, etc. - all these principles work together to provide that wonderful "sear" that comes from proper wok technique. Once you have these principles down, it's easy to experiment and make your own creations in the kitchen. The techniques make all the difference between wok dishes that are just "okay" and "wow!"While this book isn't chock-full of recipes, it has some real gems, such as Chicken with Sichuan Peppercorns and Uncle Lang's Pan-Fried Sea Bass (which I've made with Salmon as well as Halibut). I've served the Chicken with Sichuan Peppercorns to guests several times, and it consistently gets RAVE reviews. A few ingredients in the book can be hard to find, especially if you're not in an urban area, but most can be found in Asian markets.This is the first of Grace Young's cookbooks that I bought, and it's had a big impact on what goes on in my kitchen. Before I got this book, my wok was something I used a few times a year, now I find myself using the wok for things well beyond Asian cooking; a properly-seasoned wok makes for quick cooking and easy clean-up, it's a very handy tool once you know how it "works".If you're a newcomer to the sport of stir-frying, and you'd like to dive in and learn how to cook with a wok so that you get really tasty dishes, I highly recommend this book.

Just an outstanding book for anyone wanting to learn how to cook with a wok. Grace does a great job of demystifying Asian cooking. She also has a wonderful Facebook page called Wok Wednesday that is fun.

Being 1st generation Chinese American, I bought a wok in college and never seasoned it. It soon rusted and was thrown away. Ever since then, I have stayed away from using authentic woks (used non stick woks) but my mom kept on saying that I should try using a traditional wok.Long story short, I bought this book on a whim and WOW, what a book. It has instructions on how to purchase a wok, how to care for one, and numerous authentic Chinese recipes for cooking with one (and some even without). The book also has great pictures and details about the history of the wok and how it ties into Chinese culture. I have really enjoyed reading the book and cooking some of the recipes. If you are looking for an informative look into the history of the wok along with modern practical advice on how to cook with a wok (it even has pictures of condiments so you can find them at your local Asian grocery mart!!) - you cannot go wrong with this book.This will be one of the books I'll be using for the rest of my life.

Wonderfully written recipes, recommendations on ingredient brands and equipment, easy to follow techniques, and lots of photos. My husband and I have learned a lot about wok cooking from Grace's books. IMO, the best thing is the flavors of these recipes. Better than any Chinese restaurant I've been to locally. This book has totally spoiled me from ever wanting to go out for Chinese again.

With astounding accuracy, Chef Grace Young guides you into the world of the Wok, Wok Hey (The Breath Of A Wok), and all of it's nuances. Her recipes are exacting guides that leave nothing to chance. Recipes are detailed, so the dish comes out right the first time, if you follow her instructions. Includes excellent seasoning instructions and tips that turn the mysterious "Wok", into your culinary prized possession!

I never was able to turn out good wok dishes (forget those old hippy stir fries) until I got "Breath of a Wok. Now even my husband can prepare a decent stir fry. Easy to follow, this book takes the mystery out of wok cooking, has good interesting, healthy recipes, and is my constant on-the counter companion.

I have many "coffee table books" with beautiful photos of Africa, but this one is different. Offering a perspective you do not see even from an airline seat. these are aerial photos with enough elevation to show the patterns of the topography and subject matter...but also close to earth so you SEE the people, the wildlife, the plants that make up the images. A great book to just pore over the photos and dream of faraway places.

The photos are incredible. The book is extra large sized.

This book is breath taking. The photography is so beautiful you think it can't really be our planet. It portrays Africa from a different perspective showing the vastnest and complexities of the region. The descriptions of the photographs are well written. I enjoyed the poetry and prose added in the appropriate places in the book.

This book was just a feature on The Sunday Morning Show. The views of Africa that this man has captured from a helicoper are very moving. I not only want to own this book I wish I could go to Washington DC and see the exhibit of the original photographs. An exhibition of Robert Haas's photographs can be viewed in National Geographic's M Street Building, October 25, 2005, to January 25, 2006. But if that is not possible buy the book.

I was disappointed with the book. Although the book is well done, good quality and big pictures, the photos were just "nice".I expected more.There were a few beautiful images, but none "jaw dropping", and in general, I think they had no poetry, no soul.To me it seemed like an average person photographing from a helicopter (= scared animals), not a true artist capturing the magic of Africa.I was even bored half way through. I recommend checking it out at your local bookstore before ordering it through Amazon, to make sure you're getting what you expect.Nick Brandt's book, despite very different in style, causes much more emotion.

About the Author

Neil J. Salkind received his PhD from the University of Maryland in Human Development, and taught for 35 years at the University of Kansas in the Department of Psychology and Research in Education. His early interests were in the area of children’s cognitive development, and after research in the areas of cognitive style and (what was then known as) hyperactivity, he was a postdoctoral fellow at the University of North Carolina’s Bush Center for Child and Family Policy. He delivered more than 150 professional papers and presentations; and wrote more than 100 trade and textbooks; and is the author of Statistics for People Who (Think They) Hate Statistics (Sage), Theories of Human Development (Sage), and Exploring Research (Prentice Hall). He edited several encyclopedias, including the Encyclopedia of Human Development, the Encyclopedia of Measurement and Statistics, and the recently published Encyclopedia of Research Design. The author goes through how to compute in Excel which is helpful. What I find lacking is a clear and concise definition of the terms in some cases. I’d also like to have a few more examples with visuals for discussion to help me grasp the concepts - for example, I looked up the simple definition of t-test, WHY would you compare two means of variable populations? What does that tell me about my data? Just as important to how to do something is why you’re doing it. I also don’t care for the distracting remarks meant to lighten the tone and make people more comfortable. I like to be funny in most cases, but it’s a little distracting here at times.

I DO hate stats, but this book actually is making my statistics class bearable. I'm not numerically inclined AT ALL and was terrified I wouldn't be able to get the concepts down enough for my major, but it's proven to be a good companion to my professor's lectures. I got the kindle version and I'm quite happy with it.

I can not say it will make anyone like statistics but it is better than the usual statistic textbook, for sure. It gives many other examples of why statistics are important, beyond the usual behavioral science explanations, which is cool, plus, the author totally gets that most taking statistics, are forced to take it, therefore caters to those that fit in that category and really attempts to make one‘s statistics class, not suck, as much :)

As a college student renting textbooks has been the go-to method for my classes. I have been in college for 3 years already and have had my number of textbook rentals. I know not to expect a new textbook but the quality of the textbook I received was unacceptable. It is literally embarrassing to take this textbook to class it has mold specs, coffee/water-marks, and looks like a dog chewed the corner. It is not like I have the option to return either because I am already a month into the semester and cannot afford to be without a textbook for whatever shipping period time it will take. Thanks a lot for the mold health hazard!!!! I literally have to be careful where I place my fingers to turn the page. I do not understand how people do not have common sense judgement to realize if a book has mold specs, it probably shouldn't be distributed as a rental to college students. Yes, the letters/words on the pages are legible but the mold and chewed corners are disgusting.

This book explains statistics in simple language so that anyone can understand. This is not the case for most stats books! I have taken several 500 and 600 level statistics courses, and I still go back to this book occasionally to review something or read how to explain it to someone else. I recommend this book to everyone I know taking statistics

Great book for the statistically challenged. Emphasizes the how's and why's opposed to just assigning a bunch of numbers to crunch. The only negative comment I have is related to the lack of alternate technology explained. IBM's SPSS is the only technology for which solving the equations is given. SPSS works great, but is expensive and complicated to learn, and was not required for my class. Other technology is available such as graphing calculators and MS Excel. If the book covered their use as well, I would give it 10 stars(if possible).

Easy to read, loved the interactive videos, practice with SPSS, links to research. I would have given it 5 stars but some of the answer keys did not explain well enough. There were also several correction pages that needed to be accounted for-I didn't like that. However, the author, Neil Salkind seems like a person who would make a nice neighbor or friend-funny guy!

Such a good foray into statistics, it explains so much information so well and you don't feel treated like a child, rather you are treated like a human being who has logical and sometimes silly thoughts. This book should be every professors/teachers first book for any students that are starting statistics. This makes sure that people aren't scared of statistics but excited about all the possibilities of it.
